For the Cranberry Cookies I did the same except I used Cranberries not the Pecan on top of the chocolate.
Great quality of Dehydrated Foods is the preservation of it. This cookie's shelf life is months and months. When I started creating dehydrated foods; I put everything to the test. How long they last, when do some chip start getting soft; how well natural oil preserve (comes from nuts used); and made myself taste them, ...... that's how I know what I know..... First Hand Experience; fresh taste and all was good. The foods themselves are not in any way oily. Products made with Pistachio nuts really seep oil. Keep in dry dark area in air-tight container. We dehydrate to reduce oils the best we can.
I really enjoy Veggie Patties made with Pistachio, and what I do is freeze and thaw as needed.
Most of these foods, can be frozen; meaning the ones with nut oils.
Dehydrated foods are condensed favors and nutrients. It takes very little, to satisfy the body.
When it comes to the Pinwheels, to eat a whole one takes time. I cut the Pinwheels into snack bites.
