Recipe for Raw Pumpkin Pie


Filling: This is processed in a Vita Mix Machine... I do not advise with any
other blender.
The Crust recipe is at the bottom of the Pumpkin recipe. Make it first so it is ready

for the pie mixture.

Allow pie to sit for at least an hour. It is delicious.... no one would even know it's raw..... unless told.

Pie Filling
1/2 medium pumpkin (if you plan on making pinwheels; otherwise use 1/4 of pumpkin)
8 dates
3 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
1/4 tsp cardamom
1/8 tsp. allspice If you don't have ginger, cardamom or allspice use pumpkin pie spice.
1/4 cup raw honey
3 Tbs. coconut butter Once I didn't have any so I VM'ed up some Pecan Butter :)
2 tsp vanilla est.
3 Tbs. psyllium husks I used 1/2 cup of Metamucil with psyllium ( it worked even better then
just the psyllium. Psyllium calms spastic colon's; most
don't know they have this issue; this issue cause's back up in
digestive system. Eat Healthy in Pie :)
2 Tbs. bladderwrack (optional, no flavor just added nutrition)

Process the above on VM High until smooth and creamy. It will thicken in the refrigerator.

Crust:
2-3 cups pecans
8 dates
2 tsp. vanilla ext.
2 tsp. cinnamon
1 tsp. nutmeg
Dash of salt
Turn on Vm Variable speed # 3 - 8 Drop in while running the above, use tamper until all is homogenized and press into the bottom of a pie plate.
